Receving and changes to received amounts

If after receiving and posting an issue arises such as a price discreptancy or something similar is there anyway to change the received item?

Yes - on the Price Book Item view, on the top right corner, there is a Button to adjust on hand inventory quantities -click on that, and in that screen you can choose to make adjustments to the price only. Hope that helps!
